This is a great way to use up any cooked lamb you might have left over from Sunday lunch. Serves 2-3 people Preparation Time: 5 Minutes |
1 cup cooked lamb | 1/4 cup raisins |
2 cups cooked rice | 1 tblsp toasted almonds |
1 medium onion, chopped | 2 teasp black pepper |
1/2 cup frozen peas | 2 teasp chili powder |
1 small red or green pepper, chopped |
Heat a tablespoon of cooking oil in a large frying pan, and fry the onion and red/ green pepper gently until soft. Stir in all the other ingredients and keep stirring until the peas are cooked.
Serve with a few side dishes, such as Tomato Relish or Mango Chutney.
