Spaghetti | Salt & Pepper |
10-15 sun dried tomato slices | 1 clove garlic, chopped |
1/2 onion, chopped | Bunch of fresh basil, chopped |
Cook the spaghetti according the instructions - usually about 10 minutes - until al dente (there's nothing worse than mushy overcooked pasta).
In a separate small pan, heat some olive oil (from the container that the tomatoes have been in, for best flavour). Gently fry the onions and garlic until soft - don't let the garlic brown otherwise it will taste bitter. Add the sun dried tomato slices, a pinch of sugar and the chopped fresh basil.
Add this mixture to the cooked spaghetti and stir through, making sure the pasta is well coated - add more olive oil if necessary.
