Preparation Time: 15 Minutes
|1 cup whipping cream||1 teasp dark rum|
|4 oz dark unsweetened chocolate||1/4 cup chopped toasted almonds|
|1/2 cup butter||1/4 cup grated toasted coconut|
|2 cups cookie crumbs e.g. ginger, vanilla|
In a heavy bottomed pan combine cream, chocolate and butter. Stir over low heat until smooth.
Take off heat and stir in powdered sugar and cookie crumbs. Add the rum, and stir to make a smooth dough.
Pinch off pieces of dough and form into bite-size balls. Roll in the toasted almonds and then again in the grated coconut,
Chill before serving.
