I made this when I had so many mangoes I didn't know what to do with them all, and I hadn't had the chance to make mango chutney yet. It's a great fruity accompaniment to curried goat or lamb.
Prep: 5 mins
2 medium, barely ripe mangoes 1/4 white or red onion, finely chopped 1 teasp sugar 2 tblsp malt or cider vinegar Sprinkle of red chili seeds
Peel and chop the mangoes and place in a small bowl. Add the remaining ingredients and mix well. Leave for at least an hour to let the flavours mingle.
serve as an accompaniment to curried goat or lamb
