| Knob of butter | Pinch of nutmeg |
| 2 teasp cornflour (plain white flour will do instead) | Salt & pepper |
| 1 cup milk |
Melt the butter in a small saucepan. Add the cornflour, and cook gently for a few minutes. Take the pan from the heat and slowly add the milk, stirring all the time to prevent lumps forming.
Return to the heat and simmer, stirring continuously until the sauce has thickened. Add a little grated nutmeg and salt and pepper to taste.
Alternative method - place all ingredients in a small saucepan and slowly bring to the boil, stirring continuously. When the sauce has started to thicken, reduce the heat and simmer for a further 5 minutes.
