1 kg ready prepared uncooked mussels | 1 glass white wine |
1 medium onion,chopped | 1 tblsp dried parsley |
2 cloves garlic, finely chopped | 1 teasp sugar |
Knob of butter | 2 tblsp single cream |
In a large saucepan, melt the butter and gently fry the onion until translucent but not browned. Add the garlic and stir. Add all the other ingredients apart from the mussels and the cream, and simmer for a few minutes. Add the mussels, put the lid on and cook for about 3 minutes, shaking the pan every so often.
Discard any mussels that do not open. Add the cream and stir gently to heat but not boil.
Serve with lots of French bread to soak up the juices.
