I love this basil sauce - it goes really well with lobster, but you could also use monkfish or prawns. Preparation Time: 5 Minutes |
1 medium lobster tail, cooked | 1/4 cup white wine |
30g butter | 1 1/2 teasp cornflour |
1 onion | 1 tblsp water |
1 clove garlic | 2 tblsp basil leaves |
300ml cream |
Heat the butter in a medium non-stick pan. Add the onion and garlic and fry gently until cooked but not browned.
Add the chopped, cooked lobster. Stir in the cream and wine, cornflour and water, and stir continuously until a smooth sauce is formed. Tear the basil leaves into small pieces and add to the sauce. Cook for a minute or two.
Serve with pasta.
